I have perfect friends. We all have them. They do everything lovely, perfect, and while that may mean potentially inflexible personalities when it comes to adapting to unplanned situations and moments I still love my perfect friends.
One of their perfect traits is ‘meal planning’. While at first that seemed like more effort than training for a marathon I soon realised its so worth it. Its also fun to flip through recipe books and find new things to try. The notion of meal planning and putting a greater appreciation into what you eat is more rewarding than you’ll realise.
I’m not saying some elaborate foam based meal is required each day but simple delicious things that taste and make you feel good. Here I am going to share my favourites that I would definitely repeat. My current favourite is ‘Cashew Chicken Satay Skewers’.
180ml of coconut cream
225g roasted salted cashews
2 large red chillies, roughly chopped
2 cloves of garlic crushed
80ml of soy sauce
800g chicken thigh filled diced (You can use the breast or I used whole tenderloins)
1/2 cup of water
Place the coconut cream, cashews, chilli, garlic and soy in a processor or use a bar mix to create a rough chunky paste. Use half the paste to marinate the chicken and then threat the chicken onto skewers. Place in the oven on grill mode for 8-10 minutes until cooked through.
With the remaining paste place in a small saucepan with water and bring to the boil, mixing until the sauce has thickened.
Serve the skewers with the sauce on top, sesame seeds and a bunch of cilantro. Perfect with steamed brown rice and snow peas.
